It decomposes rapidly above 50 â ° C and loses carbon dioxide completely at 270 â ° C. it does not change in dry air and decomposes slowly in moist air. Can react with both acid and alkali. It reacts with acid to form corresponding salt, water and carbon dioxide, and with alkali to form corresponding carbonate and water. In addition, it can react with certain salts and double hydrolyze with aluminum chloride and aluminum chlorate to form Aluminum hydroxide and sodium salts as well as carbon dioxide.

As a fruit and vegetable treatment agent, Sodium bicarbonate can increase the pH of fruits and vegetables by boiling and bleaching, enhance the water holding capacity of protein, promote the softening of food tissue cells, and help the dissolution of astringent ingredients. In addition, Sodium bicarbonate has the effect of deodorizing goat milk, the recommended dosage is 0.001% to 0.002% .
